Cold winter days make me crave savoury comfort food. Nothing like a steaming hot bowl of Chili to warm you up from the inside. Depending on how you like your seasoning it might actually set you on fire. This is my favourite recipe for Chili Sin Carne:
Ingredients (Feeds a hungry army of 6)
- 500 g minced Quorn
- 1 onion
- 3 cloves of garlic
- 1 tin tomato purée
- 500 ml vegetable stock
- 5 tomatoes (peeled, seeded and diced)
- 300 g red beans
- 1 tin corn
- 1 teaspoon of chili powder
- 3 teaspoons of dried oregano
- 1 teaspoon of Cumin
- Some grated cheese
- Sour cream
- Corn chips or Tortillas
Start by chopping up and frying the onion and garlic. Give them a couple of minutes and add in the minced Quorn.
Stir in the tomato purée and add the spices. When the mixture seems to dry out a bit add the vegetable stock. Let it simmer while you cube the tomatoes and drain the corn and beans.
Add everything to the minced Quorn and let simmer for about 15 minutes or until most of the moisture has evaporated.
Serve on a tortilla with guacamole, sour cream and some grated cheese or with corn chips.
